Having relocated several years ago to be closer to family, Doug explains, "Frank and I had envisioned a concept like Greene's for years. When the opportunity to acquire the Georgia Bob's property arose, we seized it." Their vision combines traditional Southern flavors with a modern twist, offering cafeteria-style service that caters to diverse tastes efficiently.
Greene's is a true family venture. The name "Greene" honors their mother's family lineage, and their eldest daughter contributed by designing the business logo and signage. When Milledgeville transplant Ivan Manoylov purchased the business in September 2021, the decision was made to do what many locals had already been doing, which was shorten the name to Shima. Now a few years into its new period of ownership, Shima recently completed a significant transformation. The restaurant is dually-located at 138 and 140 W. Hancock St. in the heart of downtown.
Manoylov expressed a desire to create a space that excites people and encourages them to spend time there. The goal is to update the space, building on what Kuroshima, now Shima, has been in the past, aiming for a more modern look.
